We asked the head chef at a kids\u2019 cooking school to share handy tips and a delicious kid-friendly spring break recipe.<\/strong><\/h2>\nBy Wendy Chou\n\n<span style=\"font-weight: 400;\">Cooking <\/span><i><span style=\"font-weight: 400;\">for <\/span><\/i><span style=\"font-weight: 400;\">kids can feel like a thankless task. When kids reject new foods and haven\u2019t got a clue how much effort went into prepping a meal, it&#8217;s easy to get frustrated. Now consider cooking <\/span><i><span style=\"font-weight: 400;\">with <\/span><\/i><span style=\"font-weight: 400;\">kids. Having your kid help in the kitchen can break down some of their prejudices and teach them to appreciate where real food comes from. ActivityHero talked with Chef Cindy Roberts of the popular Bay Area-based <a href="\&quot;https:\/\/www.activityhero.com\/biz\/13254-cooking-camp-for-tweens-and-teens-palo-alto-ca?aht_src=ahblog&amp;aht_cam=blog\&quot;">\u201cLa Toque De Cindy\u201d cooking school<\/a>\u00a0to hear how an expert helps kids learn to cook.\u00a0<\/span>\n<h3>Cooking is Fun&#8230;and Practical<\/h3>\n<span style=\"font-weight: 400;\">Each of Roberts&#8217; weekly summer camps showcases a different type of cooking: chocolate, world cuisine, and handmade pizzas and pastas are just some of the tempting offerings this year. She likes to emphasize the joy and creativity inherent in cooking. Cindy Roberts started cooking at the age of 3 and believes cooking can inspire as well as educate. \u201cI focus on the &#8220;fun&#8221; aspect of cooking,&#8221;\u00a0Roberts points out, &#8220;but it&#8217;s my sneaky way to teach them the health, cost and taste benefits of home cooking.&#8221;\u00a0<\/span>\n<h3>Getting Kids to Try New Things<\/h3>\n<span style=\"font-weight: 400;\">Roberts knows one way parents can broaden the palette of picky eaters: give them a say. \u201cHave them taste test something\u2026 and suggest improvements,\u201d advises Roberts. In her cooking classes, asking the kids to experiment directly with ingredients \u201cgets even the most finicky eaters trying out what we made and giving it a second chance.\u201d In other words, the more they know about how a dish is put together, the more they can keep an open mind, even about foods they weren\u2019t keen on at the outset.<\/span>\n<p style=\"text-align: right;\"><i>&gt; &gt; <\/i><a href="\&quot;https:\/\/www.activityhero.com\/activities\/kids-cooking-classes-camps?aht_src=ahblog&amp;aht_cam=blog\&quot;">Find cooking camps and classes near me<\/a><i>\u00a0\u00a0\u00a0<\/i><\/p>\n\n<h3>Amazed by Their Own Potential<\/h3>\n<span style=\"font-weight: 400;\">When asked what the kids in her classes find most surprising about cooking, Roberts says that young chefs are completely \u201csurprised at how easy it is to make some of the products they buy packaged at the grocery store,\u201d including basics like chicken stock and mayonnaise. The homemade versions wind up being fresher and better-tasting. Empowerment and self-confidence: these two ingredients are welcome on any family menu. <\/span>\n<h3>Try It at Home, Spring Break Recipe<\/h3>\n<span style=\"font-weight: 400;\">Here\u2019s a savory spring-inspired recipe for you to try at home with your kids. The kid chefs at La Toque loved it (and ate their vegetables)! \u00a0<\/span>\n\n<figure id=\"attachment_6894\" aria-describedby=\"caption-attachment-6894\" style=\"width: 500px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-6894\" src="\&quot;https:\/\/ahblog.activityhero.com\/wp-content\/uploads\/2018\/05\/leeks-lemon.jpg\&quot;" alt=\"\" width=\"500\" height=\"309\" title=\"\" srcset="\&quot;https:\/\/ahblog.activityhero.com\/wp-content\/uploads\/2018\/05\/leeks-lemon.jpg" 500w, https:\ \ ahblog.activityhero.com\ wp-content\ uploads\ 2018\ 05\ leeks-lemon-300x185.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \ /><figcaption id=\"caption-attachment-6894\" class=\"wp-caption-text\">Photo by Flickr user Lollyknit<\/figcaption><\/figure>\n<h3><b>Leek and Olive Tart <\/b><\/h3>\n<ul>\n \t<li><span style=\"font-weight: 400;\">Prep Time: 30 minutes<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">Cook Time: 40 minutes<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">Serves 6-8<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">Adapted by Cindy Roberts from <\/span><i><span style=\"font-weight: 400;\">Field of Greens<\/span><\/i><span style=\"font-weight: 400;\"> cookbook<\/span><\/li>\n<\/ul>\n<h4>Ingredients<\/h4>\n<h6>TART DOUGH\u00a0<\/h6>\n<ul>\n \t<li>1 cup all purpose flour<\/li>\n \t<li><span style=\"font-weight: 400;\">2\/3 teaspoons salt<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">4 tablespoons cold butter, cut into small pieces<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">1 \u00bd tablespoons vegetable shortening<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">2 \u00bd &#8211; 3 tablespoons cold water<\/span><\/li>\n<\/ul>\n<h6>FILLING<\/h6>\n<ul>\n \t<li><span style=\"font-weight: 400;\">1 tablespoon extra virgin olive oil<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">3 medium sized leeks, white part only, cut in half then thinly sliced<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">salt and pepper<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">4 garlic cloves, minced<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">8 small whole olives, pitted and chopped<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">2 teaspoons fresh thyme<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">1 tablespoon coarsely chopped Italian parsley<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">3 or 4 eggs (use fewer if using jumbo eggs)<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">1 \u00bd cup half and half <\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">\u00bd teaspoon minced lemon zest (optional)<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">2 ounces grated Parmesan cheese, about 2\/3 cup<\/span><\/li>\n<\/ul>\n<h4><strong>Instructions<\/strong><\/h4>\n<ol>\n \t<li><span style=\"font-weight: 400;\">MAKE THE SHELL: Mix flour, salt, butter and shortening until mixture has the appearance of small peas.<\/span><\/li>\n \t<li><span style=\"font-weight: 400;\">Add water a little at a time until dough holds together. \u00a0Press into greased quiche pan (or pie pan).<\/span><\/li>\n \t<li>MAKE THE FILLING: Heat the olive oil in a large saut\u00e9 pan. \u00a0Saute the leeks for a few minutes until starting to wilt with \u00bd teaspoon salt and a few pinches of pepper. \u00a0Add the garlic, cover and sweat for about 7 minutes. Remove the lid and saut\u00e9 2 minutes more.<\/li>\n \t<li>Mix leeks in a bowl with olives, thyme and parsley.<\/li>\n \t<li>Preheat the oven to 375 degrees F.<\/li>\n \t<li>Beat the eggs with the half and half. \u00a0Add \u00bd teaspoon salt, a pinch of pepper and optional lemon zest.<\/li>\n \t<li>Spread the cheese over the bottom of the tart dough, followed by the leek mixture. \u00a0Pour the cream mixture over. Bake for 40 minutes until set.<\/li>\n<\/ol>\n<h4><strong>Chef Cindy\u2019s Tip: <\/strong><\/h4>\n<span style=\"font-weight: 400;\">The amount of participation is easy to modify depending on age. \u201cKids as young as 4 could assemble. At age 8, kids could make the crust themselves.
